Most tea problems come from water that's too hot or steeping too long, which makes it bitter.
Basics
- Black tea: water at or near boiling, 3 to 5 minutes
- Oolong: just below boiling, 3 to 5 minutes
- Herbal: boiling water, 5 minutes or more
- Loose-leaf tea needs room to unfurl; use a roomy infuser
- Taste before adding more time
